The bISTRO KAPZAk

Bistro Kapzak was born from the chef's passion for cooking, his love for local products and his Polish and Quebec roots. The kitchen team works in close collaboration with several local producers, who supply the establishment with a variety of fresh products, emphasizing seasonal products.

Who says Polish and Quebec fusion, says discoveries! Each menu and each dish is developed in such a way as to present you with new flavors or combinations of flavors, to take you on a journey and to introduce you to the chef's universe! Our mixology program is built in the same way, sometimes putting the Kapzak touch to classic cocktails, sometimes creating a completely new cocktail with ingredients from our region!

Bistro Kapzak first established itself in Sherbrooke in 2011, where it lived for 5 extraordinary years, sharing the gastronomic network with several excellent restaurants. In 2017, the chef made the bet to move his restaurant to Granby, in his native region. Bistro Kapzak is now preparing to celebrate its 10th anniversary in October 2021!

At Bistro Kapzak, you will be welcomed like at home, in a rustic-chic-relaxed atmosphere. Since its opening, Bistro Kapzak has been pampered by a curious and open clientele, to the delight of the team and the owners! We no longer count the moments of shared happiness, the anecdotes told and the extraordinary encounters!

THE CHEF AND OWNER

Chef Jason Kacprzak is passionate about cooking, he’s also a self-taught person. He is always looking to learn more, explore different flavor combinations, discover new products and push his limits. He cares about his region and local products are at the center of his creative process when creating each of his new menus.

For more than 20 years in the kitchen, his passion is still strong and his interest in innovation is growing. It was natural for him to add mixology as a string to his bow! This universe allowing him to push the limits once again, he has carved out a place for himself among the most creative and recognized mixologists in the country, winning several regional, national and international competitions!
